Why is Egg Mayo So Tasty?

There are millions of fillings you can put into a sandwich. A sandwich can contain pretty much whatever you want, from grilled cheese and simple ham and mayonnaise, to stupidly over the top meat-filled monsters. But for some reason, lately, I’ve been kinda fixated on one particular filling: egg mayonnaise.

If you don’t know what egg mayonnaise is, it’s pretty simple. You boil up some eggs, peel them then mash them up with a fork. You then add some mayonnaise (or a mixture of mayonnaise and yogurt if you are feeling fancy), add some salt and pepper and throw it into some sort of bread. A nice, soft bread roll is probably the best, but frankly, any sort of bread will do. Try not to put too much in, or all the egg mayo will just fall out the back of the sandwich.

But really, egg mayo seems almost contradictory. After all, what is mayonnaise made out of? Eggs, of course. Eggs and oil. So really, putting them both together sounds kinda stupid. It’s so tasty though.

However, it’s possible to make this sandwich extra contradictory. Roast chicken and turkey ham both go really nicely alongside egg mayonnaise. Insanely well. So we’re basically having chicken, chicken and chicken. For some strange reason, chicken tastes great if you add more chicken to it.

Another favourite sandwich of mine is the Club Sandwich. Normally served with chips, the club sandwich has a little bit of everything. Some pork ham, lettuce and tomato, slices of egg, pieces of chicken and some cheese to go on top. Sometimes you get a club sandwich with an extra third slice of bread in the middle, but I massively prefer it without the third slice. It’s only there to bulk the rest of the sandwich up. But again, we still have the chicken and the chicken. Egg and chicken. Again, they go really well together.

I suppose it’s no different from those New York sandwiches that have like five types of ham in them. But unlike those, the egg mayonnaise with roast chicken takes the whole life cycle of one animal.

Unfortunately, I don’t have egg mayonnaise that much. It’s not exactly the healthiest sandwich around, even if you do stick some lettuce and tomato into it. The egg itself isn’t unhealthy, but the mayonnaise definitely isn’t good for you. After all, it’s oil and egg. And while fats aren’t as demonized as they used to be, you still can’t have too much fat. There are plenty of low fat variants, and even vegan options which don’t taste that bad, if you want to go slightly healthier.

The egg mayo sandwich isn’t a particularly quick sandwich to make either. Eggs take a while to boil, and then you have to peel the shells off. You want hard boiled eggs ideally, as they mash up better, while still having an uneven texture. Sure, you can use soft-boiled eggs, but that gets a little too wet. Ideally, you want the texture to be rough, that way it has more bite.

Hm. I’ve made myself hungry now. Guess I’ll go make a sandwich…
